Healthy, Organic, Oil free Coconut Bites (Stove Top)

Sweet and chewy coconut bites with nutty almonds and a touch of salt in powdered milk. 

The first time when I tried to make these, it was a total mess. I ended up just quickly bhoonifying all the ingredients and adding grated coconut instead of desiccated coconut. I used a stain less steel pan, that’s why powdered milk got sticky. In short, that was a failed experiment!!

But the second time I was more careful and a little more patient and this turned out to be just wow wow!! 

Here’s the recipe. 

Ingredients:

1 cup powder milk
1 cup desiccated coconut
1 cup regular sugar
2 beaten eggs
Chopped almonds

Method:

Bhoonify powder milk in a non-stick pan for about 15 to 20 minutes till the aroma comes out and the color of powder milk turns into light golden brown. Then add desiccated coconut, mix. Add almonds and sugar, mix very well. In the end, add eggs in 2 or 3 portions and mix. Cook for 5 minutes more, so that it gets sticky and hard. Spread it on butter paper and let it rest for 1 hour. When it sets completely, cut into pieces. Njoy!  

Tips:

•Use a nonstick pan
•Bhoonify at a low flame
•Add eggs in 2 or 3 portions
